I say every time I open a good bottle of Australian Chardonnay that our Chardonnays are up there with the best of them, world-class. 

From the very first sniff of cool fruit with ghost-like hints of dried pine needles and a little lime freshness that came through on the first sip. 

Opening with fresh and precise Chardonnay fruit with a nutty hint gliding across the plate and filling the mouth with bright clean acid adding to the bliss factor of this wine. 

To a small degree, the wine is bordering on steely, with a medium body, however opening and building quickly with depth and concentration of flavour and good natural acidity.

It’s not hard to fall in love with Chardonnay when it’s at this quality level. 

The other thing I say a lot, when trying to match food and wine is “Keep it simple”.

This will sound like a violation or misuse of a wine that I have just described as almost being sacred in my opinion. 

I drank it with and enjoyed it to the fullest extent; with the best Fish & Chips, scollops and Calamari in Clarendon street South Melbourne with a couple of ice-cold beers and this bottle of wine.

Wine Fact:

I picked out just one element in this wine in order to match it to the meal, and that was the sharp clean fruit acid. 

For the simple reason that acid cuts through the fat in the food. This fact alone should give you a food & wine match every time.

Then comes the weight of the wine, the body, the fruit flavour, tannin structure and so on.  

But’s that’s all for another day, one thing at a time.
