For myself, I have been a fan of Pomerol wines since around 1979 when I was lucky enough to taste a glass of Pomerol I don’t remember the vintage or brand just the word Pomerol on the label.
But I do remember, I got to taste a very important glass of wine that day.
And that folks, as they say in the classics was the start of my 45-year-long wine journey.
This bottle of Chateau Le Bon Pasteur like a lot of good wines during trade tastings was kept under the table and given to people who would have a better or at least a good understanding of the wine style.
As in this and most cases, it makes you feel important and just a little bit privileged and special on the day.
The wine Rep considers your palate up to the challenge and level of tasting the said wine.
And I must admit it worked today as I have tasted this wine on numerous occasions and thought it to be good but have chosen other wines for what reason, I don’t recall.
However today I took notice.  Once again I must be honest it was the 2019 vintage and I haven’t tasted a bad 2019 Bordeaux today they have all been pretty good, and even some of the cheaper ones have looked smart!
But the 2019 Bon Pasteur jumps out from the rest. With nice floral notes of cherries and hints of cool dark earth with a little kitchen spice thrown into the mix.
If you have ever smelt the fresh-turned earth in a paddock you will know what Im talking about. There is something a little rustic and warm lurking in the background here!
In the mouth the fruit is ripe but in a dull way – More like the taste you get from biting into the dusty red grape itself, rather than that big  Australian wine bursting in your mouth with sweet fruit sugar kind of ripe.
The tannins are delicate and yet still precise in this young Bordeaux.
The 2019 is just a next-level wine. Superb!

The rot has set in.

Although the wine is still young it is enjoyable as it is. With or without food.
As usual, I enjoyed my wine with the simplest of meals, pan-fried fat pork sausages and mashed potato with cracked white pepper.
The best way to enjoy a good bottle of wine is to keep the food simple!
