*Nicolas Feuillatte Brut, $50.00 = 4 ****
*Bollinger Special Cuvée Champagne, $85.00 = 5 *****
*Seppelt original Sparkling Shiraz, $25.00 = 3 ***

Starting with the:

Nicolas Feuillatte Brut $50.00

This Champagne is light bright and full of flavour, this wine never fails to impress me with is strong bead of bubbles streaming up from the bottom of the vintage flute.
On the nose and in the mouth hints of green apple and creamy raspberries make a brief appearance.

This is for Champagne lovers with an appealing freshness.

Followed by the:

Bollinger Special Cuvée Champagne, $85.00

Bollinger Special Cuvée is one the most recognisable champagnes on the shelves.
This wine is a house style, made to a formula, however it has a distinctive tinge to the rounded full-bodied flavour derived from a high proportion of Pinot Noir used. Along with the fact the base wine is matured in oak adding further to the full flavour. Making it my choice as the second wine to drink in todays line up.

To finish the day:

Seppelt Original Sparkling Shiraz NV $25.00

On the nose this wine displays sweet ripe Shiraz aromas. That follow through on the plate with sweet raspberry, and a little oak spice supported by drying tannins.
The palate is richly flavoured with sometimes hard tannins at first. Never the less at $25.00 this classic Australian sparkling Shiraz has never failed to please me.

As a retail wine sales person, One of my biggest disappointments is this wine experiences its best sales over the Christmas period, and just trickles through for the year. (What a shame its one of Australia’s Icons)

For a real treat try the Seppelt Show Sparking Shiraz 2008 it is a little more $$ wise but what you get is the real deal a sparkling shiraz that with age develops flavours of mushroom and old leather.

For the surprise of your life try this wine with Steak Tartar

Food for all the wines:

A charcuterie board compiled of soft and hard cheese and a range of Spanish cured meats and a range of crisp crackers.
