Located in the Clare Valley, 130km or about two hours north of Adelaide in South Australia. Born in 1984 with a strong partnership between Tim and Pam and local coopers, Bill and Jill Wray. It started with the thought of making wines and small oak casks. However, in the first year itself, the couples had to face grape shortages. 

The storm passed by and the year 1986 witnessed the first release of wine under the ‘Adams and Wray’ label. It was a success story written by friends but unfortunately, the partnership ended in 1987.

In the same year, the winery site at Warendra Road in Clare was purchased. From this year on, the expansion started. The brand is now recognised worldwide in the home country and internationally.

Tim Adams Shiraz 2018 Clare Valley 


The wine shows a vibrant purple colour and exudes floral and fruity aromas of violets, mulberries and blackberries from its fragrant nose. This indulgent Clare Shiraz is full and soft on the palate, filled with small berry fruit flavours which are further enhanced by American oak nuances. Combined with fine and fruit-derived tannins, these fragrances and flavours lead to a smooth and captivating finish. This elegant dry red has been crafted to be enjoyed upon release, but can also be cellared for up to a decade from vintage. It tastes delicious with Asian spare ribs, BBQ T-bone steak with chimichurri salsa, and beef burgers.

Tim Adams Riesling 2021 Clare Valley


A deeply flavoured and fragrant wine capturing the character of Riesling enhanced by aromatics of lime, lemon and grapefruit. The seamless palate provides an acid finale. Like most Riesling wines from Clare Valley, it should be drunk whilst young and fresh. The wine can also be cellared for five years for delightful aged flavours. This wine can be had as an aperitif or served with seafood.

Tim Adams Schaefer Shiraz 2015 Clare Valley


A deep red-coloured elegant Shiraz. Upon a glass swirl, it reveals fruit-driven aromas of red berries, dark red cherries and plums. These fragrances mirror on the drink’s full-bodied palate along with a hint of spice from the oak maturation. You may pair it with grilled or roasted beef, or Cheddar cheese.


Tim Adams Skilly Ridge Clare Valley Riesling 2020


This premium wine underwent cold settling, fining and single filtration in order to preserve the delicate characteristics of Riesling. Poured in a glass, it flaunts a pale straw colour. The drink offers aromas and flavours of intense lemon, grapefruit and blossom. These elements are complemented by mineral notes and acidity leading to an enjoyable finish. A pink / bronze-hued wine filled with peach, pear and lychee flavours. These juicy flavours are balanced by cleansing acidity and citrus zest to result in a persistent finish. This is a great wine with a short-term cellaring potential, tasting marvellous with salads, seafood or Asian cuisine. 


Tim Adams The Fergus 2016 Clare Valley


A blend of Tempranillo, Grenache and Malbec grapes. Flaunting a ruby red colour, this wine exhibits fragrant berry aromas while its complex palate displays flavours of red berries infused with spices. Adding Malbec to the mix provides the palate with added berry and violet flavours. This mouth-filling and elegant Clare Valley wine pairs wonderfully with lamb, duck, turkey and gamey meats.
